Breakfast: Buckwheat groat "porridge" with pear & ginger
This could not be simpler and is a super healthy way to start the day:

Cover 1 cup buckwheat grouts with water and soak overnight

In the morning, rinse the soaked grouts with cold water until the water runs clear. Throw them into the food processor until you reach your preferred consistency. (I like lots of texture and don't process mine much at all.)

Add 1 very ripe pear, diced and 1 T freshly grated ginger (to taste)

This is just as tasty heated as it is cold if you want something warm. I generally it top with some nuts or seeds for extra crunch and flavor. I haven't strayed from the ginger and pear combination yet because it's so yummy and I'm not tired of it yet, but I can see adding berries when they're in season. This is enough for a couple breakfasts; it's super filling & easily keeps me satisfied until lunchtime rolls around.

interesting, never heard of serving buckwheat uncooked.

Pearly barley is great as well. Simply soak overnight, then cook with cinnamon and sweetener ( I use stevia). It has an even healthier nutritional profile. And as with the OP's recipe, you can add fruit, nuts, etc. You can also make it savory, and use it similarily as you would polenta.
