Steamed Salmon with Hoisin & Watercress

2 tbsp each : Hoisin sauce, white wine, grated root ginger
4 salmon steaks, about cm thick
4 tbsp chives, coarsely chopped
½ bunch watercress or coriander (cilantro)
1 lemon, juice and julienned rind

1 Combine the Hoisin sauce, wine and ginger and spread over the top of the salmon. Top with chives.
2 Line the top section of a steamer with baking paper. Place the salmon steaks on top. Cover and steam over simmering water for 5 minutes, until just cooked.
3 Serve topped with the watercress or coriander and lemon rind. Add a squeeze of lemon juice before serving.
