Hi all. I was wondering if anyone has the recipe to the French francese flourless mouse cake ?
I had one today from Brunetti's and fell in love, I've been scouring the Internet trying to find a recipe but it's so difficult to find for some reason.
I hope someone has the recipe they could kindly share with me :) here's a photo of the cake yum yum !!

I would look up chocolate and caramel fondant recipes, and then a chocolate mousse recipe. To make it, create the fondant in a suitably sized ramican that has been first buttered. Then, make the mousse in a buttered bowl. Remove the fondant from its container and press into the bowl full of mousse. Invert the mouse onto a plate of chopped hazelnuts. You might want to place the bowl of mouse into a little hot water to loosen before turning over the hazelnuts.

That's my best answer as I have no recipe for it.

Welcome to DC. I hope you won't be offended (we all make typos on here) but I loved the idea of a "mouse cake".

Haha yes Mad Cook, I thought I'd put "flourless" "mouse cake" as some sites say flourless cake and some say mouse cake. :)

I think what Mad Cook was referring to was that you spelled it mouse cake, as in mouse - little furry rodent, when it should have been spelled - mousse cake - mousse being a light airy starchy item, similar to an American style pudding, but with the texture of stiffly beaten egg whites.

It's ok though. I mithpell woids all the tim.:LOL:

Welcome to DC and do let us know how it turned out. Even if you consider it a failure. We love food porn. And that picture is a great example of it.

There are recipes for French francese flourless mousse cake. I think when you say you can't find one, you are being thrown by the shape. That shape is attained by the pan that the cake is made in. If you just Google "French francese flourless mousse cake" you will find what you are looking for.
