1-3/4 cups whole wheat flour
3/4 cup whole wheat pastry flour
2 tablepsoons cornstarch
1-1/2 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/4 teaspoon sea salt
1/4 teaspoon ground mace
1 cup ripe mashed banana (about 2)
1 cup fat-free soymilk
1/2 cup honey
1/4 cup unsweetened apple juice concentrate
1 tablespoon blackstrap molasses
1 teaspoon vanilla extract
1 teaspoon grated lemon rind (or 1/2 teaspoon lemon extract)
1/2 cup chopped roasted walnuts (optional)
1/4 cup chopped dates
1/4 cup chopped mixed dried fruit
Preheat the oven to 400 degrees. Line a 12-cup muffin pan with paper liners, or spray with cooking spray.
Sift the dry ingredients together in a large bowl. Stir in the goodies.
Whisk the wet ingredients in a separate bowl (or blend in food processor).
Pour wet mixture into dry ingredients. Stir just until mixed.
Spoon the batter equally into the prepared tin. Fill each cup nearly to the top.
Bake 15-20 minutes.
Cool muffins at least 10 minutes before removing from tins.
Makes 12 muffins.
