Brandy was invented as a way of dehydrating wine! They thought you would just add water later. Turned out to be more interesting as brandy.
 
There is something to the way wheat is raised today. It has much more gluten than the older strains, which seemed to be effecting some folks in a negative way. The best is to listen to your body. If you're bloated and lethargic when you eat breads and such, then eat less of them.

Ive been wanting to try the einkorn flours, they are made from a more ancient grain and thought to be healthier. Has anyone tried them yet? If so, any adjustments that need to be made?

And you're so right about the fad diets. I had a gal tell me the other day the south beach plan really works, she's done it four times. Really? If it works why do you keep needing it?

I haven't tried Einkorn flour, but I've been real happy with heirloom wheat flour from these guys.

4.5 lb Organic Hard Red Wheat Flour - Milled Medium - Bluebird Grain Farms, Grower of Organic Emmer Farro, Whole Grain and freshly mil

This flour works great for bread. Unlike some of the store-bought whole grain flours, I've never had to add vital wheat gluten or make other adjustments to get a good rise.

Here is the loaf I baked yesterday using it.

I have no experience with einkorn wheat. I haven't even noticed it at the health food store. I would love to hear your (or anyone else's) experience with einkorn.

I believe the written article. With the way they are modifying our food source I think it is the root of a lot of our problems today. Yes, Americans do pile their plates too high & that is a good part of our obesity problem but I honestly think that all these GMOs is the reason we are running rampant in depression, autism & other mental problems. Name one other country that has the same kind of problems, as high as we have with the 3 things I listed above & compare their food sources compared to ours.

This is my opinion & I am not here to debate it, it's just how I feel.

We eat way too many preservatives in our diets & other unnatural chemicals that don't belong in our food source.

I lost 40 pounds last year from eating better. No more boxed crap, no more fast food, some exercise & as much fresh foods as I possibly can.

I also think some of the ways we cook our foods could be a problem. I don't like microwaves at all & if it was up to me I wouldn't have one in the house. I don't trust them even though I can't stop eating popcorn out of them & if your read the ingredients on a bag of microwave popcorn, you are basically eating melted chemical but it's a weakness of mine.

Just for the record, autism is not a "mental problem." It is a neurological disorder. :)
 
Yes, I know it's not a mental problem but I still think the poisons we are being fed leads to all different types of problems. A few additives here & there may not make a difference but when every single thing we ingest has ungodly amounts of the crap after a while it will poison us & I think it already has.

Look at the onslaught of cancer. I only originally named 3 things in my first reply but there's a whole lot more that I blame on all the GMOs & all the stuff they add to our food chain, they can keep their antibiotics, steroids, GMOs, & preservatives.

Today's bread tastes nothing like it did 20+ years ago, it takes so long for it to mold. I really need to start making my own bread but I try not to eat more then 2 slices a day anymore.

100% agree. Grocery stores have tons more "food stuff" in them than real food. We've truly been suckered into believing that eating chemical-laden frankenfood from a box or a can or some frozen package or the drive-through is perfectly fine and perfectly healthy.

And people think I'm weird for spending extra to get some organic groceries. I read labels and have done so since the '70s. Then they wonder why I'm healthier than most people my age.
 
I had a customer at my job in MD who was convinced I (along with my children) was allergic to dairy and all grains because I always have dark circles under my eyes. He'd sayHe wanted me and my family to go on a diet of only fresh vegetables, fruit, fish and meat for 6 weeks to see if I felt better. No grains, no dairy. Sure, sounds great. Are you going to foot the bill?
He'd say things like, "Your kids get a lot of ear infections, don't they?"
No.
Don't get me wrong, food allergies are serious business and I have actually cut way back on dairy and feel much better, but managing to consume enough calories to survive off of only fresh vegetables, fruits, fish and meats would cost a bit more than my monthly food budget. I too am a firm believer in moderation.

A travel buddy, nice looking guy, always had dark circles under his eyes. He finally got his allergy meds under control, and the dark circles disappeared. We almost didn't recognise him when we saw him last.

Re: cancer, life expectancy has increased by a huge number in the last hundred years, so diseases that used to be rare are more common just because we're living longer. Cancer and Type II diabetes usually occur in older people as the body ages.

Re: bread, if it's poisonous, how does limiting yourself to two slices a day protect you?

The way I understood matey's post didn't me "we" you and me. I know we eat a lot of from-scratch stuff prepared from fresh, wholesome foods. But, unfortunately, some people exist on only junky processed foods. Look in my shopping cart and you'll see about half the stuff is fresh produce. The other half is balanced nutritious stuff. No processed, no junk, no frozen or "convenience". Then look in the cart of a rather generously proportioned person and it's full of frozen dinners, sweetened cereal, box mixes - crap. I think the second group is the one matey tags as ingesting every that's crap. I know I see them in the stores and I bet you do too GG.

I was thinking the same thing about cancer. We do get more of those diseases that you have to live long enough to get. Okay, that's not worded quite right, but I hope you get my drift.
