Low Sugar Gooseberry Jam Recipe Needed

I am looking for a low sugar recipe for gooseberry jam. It needs to be safe for canning as I plan to can the jam and sell it at the farmer's market. I have the Sure Jell low sugar pectin so I'd like a recipe that uses that. Does anyone have a good recipe? Thanks for any help you can provide.
 
If you are getting the low sugar Sure Jell in a box, it will come with a recipe.

Pay attention to your altitude if you are over 1000 ft above sea level.

I personally haven't made it because I don't use pectin from a box, or pectin at all, and I try not to use any sugar when possible. I use the nchfp recipe for fruit puree, but that is not 'jam' or 'spread'. I wouldn't sell mine at a farmer's market but it's great for my family.
 
Thanks. The pectin did come with recipes. I just wasn't sure if I could use that one since gooseberries weren't listed as one of the fruits.

Thanks for the help. Made the jam today. I really like it. It's tart and, to me, tastes like a cross between cranberry sauce and plums.

Oh GOOD! Cranberry plum...that sounds delicious. I'm a big fan of both those flavors. How great you have gooseberries to pick!

It is about all I can do not to crack open a jar and diving in with a spoon. I'd never had gooseberry jam before so wasn't sure I'd like it. Hope the customers at the farmer's market like it.

We have 1 gooseberry bush. I really need to try to propagate that into more bushes. Took me 2 years to get enough berries for a batch of jam.

If you can root some branch tips and get them to come back next year, that would be wonderful to have new gooseberry bushes.

It is. We are very blessed here. We have mulberries, gooseberries, black raspberries, wild grapes, wild blackberries, black walnuts and hickories. Trying to get paw paws going but I haven't had much luck so far.
 
MIFarmLady, owwwwww, those sound so great. We have new grapes going this year, some hybrid seedless and some concord, and two kinds of raspberries. Last year we put in 2 honeyberries, and then two more this spring-no berries yet. Our area has lots of wild hickory trees. When we ask, and sometimes people ask, for us to remove their hickory nuts because they can't mow over them! There are mulberries here too, Wisconsin, on public country roads. I haven't tried to grow paw paws, I hope they grow well for you!

Elderberries are suppose to be easy to grow here. My husband will say, OH great, one more thing to mow around, lol. He does like the berries when we get them!
 
Elderberries are on the list to add. Not sure where we'll put them or what I'll do with them yet. I never had a paw paw until a few years ago when we went down to the Paw Paw Festival in OH. They are so good!

Elderberries and elderflowers are used a lot in Danish cuisine. I'll be happy to translate some recipes from Danish if you are interested.
 
Bliss, the "honey berries", are those haskap berries? Weird looking things, but delicious.


Yes, haskap berries. They grow well in colder climates, we are zone 4 and it gets pretty cold here. Michigan may be the same.

I haven't tried them yet but they were recommended by a friend in MN and another in BC canada. We made sure to get more than one variety of them for pollination.
 
I planted some Honey berry plants last year, then got a few more this year. The newer ones were more mature and actually gave us a few berries. They kinda look like long blueberries. As far as the taste goes, I like blueberries better , but if cooking or making jam with them, im sure they would be good. The first year the plants were kinda stagnant in growth, bu this year, they tripled in size.

Ive never tasted a paw paw, but I always see the trees advertised in every garden catalogue I get, so I finally got a a few a few years ago. Unfortunately, I really have no more room in my yard, so they were planted in just about the worst spot (little sun). The trees aware grown, probably 15 - 20 feet hight and still now paw paws. The only issue I have is they seem to propagate by sending out shoots from their roots. Definitely not was bad as bamboo, but they are making a run for it. need to keep on top of mowing down the shoots so you dont get a cluster of trees. Maybe one day Ill get a paw paw to try.

Currants have been my unexpected success of the year. Its amazing how many berries come off of one bush ( I have 3). Very easy to use and make jam with. Already made some currant jam, and a currant/ blueberry combo jam (3/1 ratio).
