Hi there,

I am a 41 you single man and live in Marin County, CA. I am a novice cook, but I'm also creative and like to learn. I haven't worked for a year now so I am on a tight budget. I'm a diabetic (no shots) and have sugar cravings like Jeff Goldblum in The Fly. I don't have any kitchen gadgets except for a slow-cooker, which I love.

Looking for: Frugal, low carb, and delicious ideas.

Interests: Nutrition, Vegetarian cooking (but I eat meat), organics, cheap ideas

Turnoffs: Aspartame, splenda, sucralose, amino-sweet, MSG, rbgh, hydrolized vegetable protein, GMO food, high fructose corn syrup, oil spills, mean people, and red dye number five.

Best dish: Fusilli with toasted pine nuts and sun-dried tomatoes.

Today I made a grilled peanut butter and cheddar sandwich on spelt bread. Not exactly healthy. It was like eating candy, really.

I also enjoy Yoga, poetry, farmer's markets, and hiking. I'm single and don't entertain, so it is just me.

I am diabetic as well. I'm sure some of our other members will jump in to help. The as I will tell you it is important to keep track of you blood glucose readings by testing yourself in the morning (fasting bg) before and after meals and at bedtime. This lets you know where your BG numbers are. If you have a diatitian the should teach you how to exchange carb for carbs. sugar is a carb any thinkg ending in ose lactose (milk) is a carb some veggies are high in carbs,corn, peas, potatoes to name a few.it will help if weigh and measure these things. I'll stop now, and will be glad to halp you as much as I can. Remember check with your doctor or dietitian before trying things. Be a pest if you have to. Good luck

I like your style. And your best dish. It sounds really good but I can't say I agree with the chedder and peanut butter on spelt. :ermm:
