do you have time to marinate it? maybe you can let it sit in a burgundy wine-oyster sauce mix for a few hours, then use a grill pan and fry it over high heat. then pat some burgundy-flavoured herb butter on top and let it ooze in a low heat oven till melted...of course, serve it with the rest...
