    Making chocolate candy is NOT too easy unless you make truffles. If you'd like a recipe for those, I'll be glad to post a great tnt one. Otherwise you will need to temper your chocolate. That's pretty easy to do, but messy and time consuming. And yes, you will need UNsalted butter.

    I have a chef's knife that I reserve for chopping nuts and chocolate so my "good" knives won't get munked up. and for large quantities, I use the pulse button on my food processor.

    Margi, they cost the earth without coral! Around here sea scallops go for anywhere between $18 and $25 per pound. And the Nantucket Cape Scallops (my personal favorites) can go even higher. :ohmy::wacko:
