The Stainless steel knob is still an accessory. It only comes in 1 size that I am aware of & some of my LeCreuset pots have smaller knobs than the stainless.

I use a similar recipe for pork loin out of Fine Cooking mag. Big differences are I brine for 8 hrs minimum and use about 1/2 of the oil - no sear/saute. Also, using mustard (Maelle) with seeds already in it. Cooks fat side up for 15 or 20 minutes at 450 F - this takes care of the sear. Then...
