Steel skewers vs. bamboo ones, your opinion.

they are not just for kabobs. I hang drumsticks from them and hang them in my bbq grill. this prevents me having to turn them, and nothing sticks to the grate. zero cleanup besides scrubbing the skewers. I got these cool skewers from my stepdad's restaurant. he used them to hang CharSui, I...

After washing/drying wok, I don't know if I'm caring for it right.

being thousands of miles away on the internet, i would guess the OP isnt getting the wok hot enough to begin with. this was a lesson i learned stubbornly. and a Wok is essentially the Anvil of the kitchen. you cannot break one. if it rusts some, scrub and move on. if i ever get a new...

    Chia Seeds!

We all need fiber. I’ve tried making pudding with it. It works! Simply soaked overnight in soy milk. It thickens and is delicious. Tiny teaspoon of maple syrup, some cinnamon. POW! I added a few drops of vanilla extract this time. Next time maybe some coconut milk!

    Chawanmushi. Japanese steamed eggs

it is essentially DASHI stock. (mushroom, seaweed Japanese broth) mixed with eggs. 2.5X the volume or mass of broth vs eggs. strained and steamed after you season it with salt, soy sauce, and Mirin (Japanese cooking wine). I weigh my eggs, and then multiply by 2,5 and add that volume of...

    Chawanmushi. Japanese steamed eggs

Us Cantonese have our own version. Way less silky and delicate. Ours is more, “in yo face” with sausages shrimp and vegs. My wife prefers this one. So it’s the one I make.

A device for an amateur cook to cut up vegetables very small.

the correct tool is a food processor. a regular box grater would get you very close. the smaller holes work well.

    Conflicting carbon steel wok care.

i grew up in a family with a chinese restaurant. the chefs would regularly run a steel wool around their woks. they toss it in and push it around with their wok brush. i do the same, i use the steel wool tool that i have for my bbq grill. my wok is crazy non stick. the 1st step of any...

The ORIGINAL Air Fryer. Oven baked fried chicken!

this thread derailed. I imagined crispy fried (like) chicken from a briquette fired kettle stove would have taken center stage, over the obvious fact that I played with the term, "air fryer", and less obvious fact that it was sarcasm. haha...okay people. UNCLE <-----term meaning I give up...

How much to you worry about what you eat?

yes. if I could send a note back to my 29 year old self. I would tell myself to lay off the burgers and pizza, and giant burritos and eat the occasional salad or two. and to stop drinking so much beer.

People say this is rust on underside of cast iron but I'm unsure!

I'll season the backside, once. after that, it is on its own developing whatever color it does after that. mine get splashed, splattered, spritzed, with oil throughout its service life and don't have issues. the back side of my wok looks like POO because the wok-toss movement keeps the...

    My most used wooden spoon.

I got this spoon free when a neighborhood grocery store sent me a “welcome to the neighborhood “ gift. It’s so beat up. I’ve bought newer and better spoons, but this one seems to be in my hand most often. I don’t mind gear w patina and stories. All the visible stains and burns are a result...

I have a problem with soft boiled eggs.

for the record. STEAM is a constant temp. it is independent of how many eggs you do. so if you steam one egg, it is the same time as if you steam 10 eggs. you have to adjust if you are boiling them. I get the steam rolling, and put the basket of eggs in, and start the timer. 6 minutes if...

I have a problem with soft boiled eggs.

I wouldn't eat a soft boiled egg with all the pomp and circumstance. no little cups, where I have to tap around the egg. I say soft boiled might be my favorite egg. although mine are soft STEAMED eggs. I just peel them carefully and put them over toast, or a salad, or my pizza. mostly over...

Anyone taking notes of what they eat?

I think I am going to start a journal. for my food. nothing "dear Diary" or anything remotely like it. just what I eat each day. I am trying to trim down drastically, and I think it would be good to track what I eat. plus if I ever meet with my Dietician again, I would have data. anyone...
