    Roast Beef with Raspberry/Jalapeno pres.

Roasted another GREAT beef roast. Preheated the oven to 500, lightly salt and peppered the roast, poured the Raspberry Jalapeno preserves over the top, smeared it around. Popped the roast in the oven on a rack for 15 minutes, then turned down the heat to 300 WITHOUT opening the door. let it...

    Chili recipe ideas?

Don't use ground beef. Get a sirloin, remove most of the fat and cut into cubes. Try adding some scotch whiskey.. not kidding. It really adds to it. I converted a die hard chili person from Texas to adding scotch in their recipe.

Messing about in the kitchen last night, I decided to try and make pineapple carmel!! IT WORKED.. possibly the greatest tasting caramel I have ever tasted. BIG party last Saturday.

Anniversary party for a club I belong to. I successfully roasted 40lbs of Pork loin in the oven. The Hot/cool method works once again. I seasoned each 5 lb loin section with dry seasonings(steak seasoning, seasoned salt, garlic salt). Pre-heated the oven to 525F. Put the loins in and let...

Searing Steak Doesn't Seal In Juices

Searing meat brings it up to the Maillard point. Its a reaction that causes that great flavor. To get the reaction the meat has to reach a temp between 300F-500F. You do that with meat by searing it or with roasts you can start with a VERY hot oven and then turn the heat down if you don't...

Help! I don't know what I'm doing in the kitchen.

OK.. eggs, while a perfectly cooked egg is almost an art form. Cooking an over-easy egg is not rocket science. You said you like a ham and egg sandwich with Mozzarella. Ok, we're going to keep this simple. Pick up a small ham steak, a carton of large eggs and some fresh mozzarella...

    Made a "ganache" tonight..

Ooh.. forgot a critical ingredient. A tablespoon of creamy peanut butter. It really makes it smooth and adds a nice richness. You really can't taste peanut flavor, just smooths it out.

    Made a "ganache" tonight..

Tonight, wanting something chocolaty I pulled the cocoa powder, sugar, vanilla and a butter out. While gnoche is generally chocolate melted by hot heavy cream I had neither the solid chocolate, nor the cream. Now this was cooked by eye, no recipe, after all I was making it up as I went...

Good luck!! I won here a few years ago. I still enter, I make more chili than anyone else, it is always gone first but for "some reason" I don't win. Around here its about how many friends you can get to come out and vote for your chili. It isn't blind voting by a jury.
