    In Texas, pinto beans are used in chili...IF beans are used. Big controversy on that! LOL! And a "downhome country" meal is pinto beans slowly simmered with lots of smoked ham chunks, served with cornbread, "greens" country fried potatoes, and of course, iced tea.

    Leigh, my grandmother cooked "butter beans" the same way....delicious! And you're right about slow cooking without seasoning overnight for just about any kind of beans...that's the way I like to cook them too. Sometimes I do add a bit of ham/ham hock, depending on the type of bean... :)

    What goes with Meatloaf?

    Mashed potatoes are traditional with meatloaf, at least around here. You'll usually find green beans or sweet peas and/or creamed spinach served along with these two...and fresh hot rolls, or cornbread. In fact, this is my menu for Monday! How 'bout some Apple Pie or Banana pudding for dessert? :D

    I totally agree with both 'coot and ironchef....there are some spices I will NOT allow myself to run out of.. (garlic for one! ) As I said in my reply to the fajita recipe request.....the real secret is properly cooked good quality beef or chicken.

    I've tried saffron, and didn't find that it added much to a dish...except for yellow color. Tumeric is said to be a good substitute, and is far cheaper.     Kitchenaid Mixer...highly recommended

    I swear by my vintage upright Sunbeam Mixer, complete with original glass and metal bowls and beaters.....that's older than I am! Won't tell MY age, but the mixer is from the 1940's. It also just plain looks good sitting on the counter! :)
