    Tasso Ham

    Still working through the box of pork in the freezer..I had a pork butt left over so I cut it in half and am using one piece to make this...One inch steaks, covered in dry cure. Going in the fridge to cure for a few hours, then on to the smoker..stay tuned..

    It's been a couple of weeks since I hung this stuff..the thinner parts are ready. Still a little soft on the thicker end but I'll fry it up tonight to make Carbonara..which is pretty much the reason I make this stuff... Excuse the greasy fingers...lol

    A friend of mine raises Berkshire Pork..they aren't crazy about certain cuts so they dropped off a big bag of sliced hocks. Here are a few...they are going into the brine today and I will smoke them early next week..good for soups, stews, other slow cooked dishes...wish me luck..

    Home made Back Bacon

    Here are some smoked pork loin pieces..brined for 48 hours and smoked for 2 1/2 hours to 150 degrees..will let them cool in the fridge over night then slice them up and shrink wrap for the freezer tomorrow..

    Just cut into this one today..It has been hanging since Dec 5..Looks good..had no mold. It took this long to lose 35% of it's original weight..Tastes great..a bit mild..I'll ad more spices next time..
