    Great reply, thank you! I don't recall the term vegan growing up. It snuck up on me so there's no telling when I first heard it but I'd guess maybe around 2000. I was and am fairly insulated from veganism so that may have played a part in it. Good point about seemingly vegetarian ingredients...

    I apologize for the late response, and thank you for the detailed explanation. Probably less than 1/3 is Velveeta "cheddar" shreds but the idea is to make it creamier than cheese alone, which can be glopy even if served immediately. I do the pasta al dente for the reasons you mentioned.

    Thanks. No microwave would be involved. It would be in a large aluminum pan, reheating low and slow in the oven. When it becomes fluid I'd start the pasta.
