    We use tenderloin only. We do roll it in cracked peppercorns and salt and sear it VERY quickly on all sides and then wrap and freeze until it can be sliced paper thin. Heavenly.

    acini di pepe is tiny pasta - about the size of a pepper corn (hence "di pepe"), a little goes a long ways. It made 3 generous servings - perfect for a light supper. Did I mention that we pigged out at :huh: Taco Bell while on the road for a late lunch that afternoon? :rolleyes:
