    Sugarless Fish Sauce/Substituting for Shrimp Paste

    Anyone know of a good brand of Thai fish sauce that doesn't contain any form of sugar? (no ingredients ending in -ose) Also, can pulverized dried shrimp be successfully substituted for shrimp paste in Thai recipes?

    Sauteeing Ginger

    Anyone know what happens when you saute ginger too long? Not until it gets black but past tan. I could try doing it myself, but it would save me some time if someone else had tried it already.

    Canned Coconut Milk - Can it be reduced?

    The brand of coconut milk that I have available to me is not quite thick enough for my needs. Also, I usually don't get a can where the milk on top is thicker than the milk on the bottom. Is there a way of reducing coconut milk down without having it curdle?
