It looks like a basque cheesecake, which is excellent. I made them in culinary school.This is the cheesecake I made, to take to Thanksgiving today. Just a simple NY cheesecake, with a small amount of sugar, compared to other desserts (the reason I made it, for my one friend, that has to watch her sugar intake). We had a pumpkin pie and a pecan pie, and about a cup and a half of heavy cream, whipped with a little sugar and vanilla, to top all the desserts with. I left the remainder of the cheesecake with her, and told her it freezes well, so she can save it for later treats.
