2026 - What have you had for lunch/brunch?

I had a humongous piece of thick toast and a coffee for breakfast. I'm liking that coffee @Meryl told me she uses in her Bialetti moka pot. I definitely need some milk product in it though. It's pretty strong to me.

Lunch will be some store bought fried chicken.
 
I just finished my coffee about an hour ago. I have a quiche in the oven. It's got caramelized veggies (red and bell peppers, shallot, and mushrooms), roasted garlic (3 cloves), diced ham, gruyere, gouda, and fresh chopped spinach with some nutmeg, smoked salt (and heavy cream and eggs of course). It's smelling really good right now. But it's only 3:15pm and I normally don't eat breakfast until around 4.
 
Well it might have cooked a few minutes longer than I wanted.

Edit: I take that back. It was awesome. Yeah, some of the outer crust got a bit browner than I thought it would. Because I chose a pan where I wasn't going to have much of an outer crust, I thought I wouldn't need to cover it.

That does sound good and sounds pretty easy to make as well :)
You'd think I'd just heat it in the microwave but I don't. I rarely eat it freshly purchased because I don't think they cook the noodles long enough, so I reheat in a skillet to let them get crispy and take away the doughy flavor.
 
I just liked the look of it and for no other reason.

No I didn't know it was a Nestles product or that Stouflers was either ....... Nestles is/was usually pretty good quality stuff from memory ....... ?????
