I was diagnosed with Coeliac Disease about 2 years ago now.
I am a keen cook and I have learned to adjust and I do like a gluten free challenge! Some things are a faff but its always worth a try to see if something will work.
I find its trial and error. And I've made many errors
I have the most success with making gluten free cakes. They behave quite well. Pastry is a bit more of a challenge but I think I have cracked it. I dont make it that often so it just takes a bit of patience.
I don't have much luck making bread type stuff, I made hot cross buns once, they could have been used as weapons of mass destruction. Fine hot out of the oven but then they set like concrete.
I buy "Genius" bread, its expensive but its about the best one I have found, Warburtons also do a good one. I don't like most stuff you get on prescription.
Have never made pasta so would be interested to hear from anyone who has! I find the shop bought pasta is ok. I soak lasagne sheets first though and then they behave.
