Induction ranges are good for cooking. They heat up quickly and the cooktop itself stays cool. Power consumption is going to vary from cooktop to cooktop.
Looking at a Vollrath 14" x 15 1/4" induction range, it uses 1.8kw.
A Cadco 14" x 12 1/4" traditional range uses 1.5 kw.
So, per hour, the traditional range would use less energy but takes a lot longer to heat up. It would be different from cooking method to cooking method but the total power consumption results are going to be pretty close to the same for each type of cooktop.
Better than gas? That depends on your personal preference. Gas is instant heat whereas induction does take some time to heat up.
Given the choice, I would choose induction over traditional electric cooktops but gas wins out over all for me.
