That looks like a roulade/jelly roll to me. Ube, is that the purple yam?

That is certainly a “jelly roll” but it is quite different to a western version. The ube is more like a hard custard than a soft cream or jelly. The texture is quite dry, they aren’t very sweet and for a western palate, they don’t really meet that confection profile.
This is true of many traditional Asian desserts - nowhere near the level of sugar overload that is common today in the west. But the ones that do resonate to the western palate can be very very sweet - two completely different ends of the spectrum.

@BAPyessir6 still using the Ube flavouring? found this recipe, have no idea who this person is, never seen any of her stuff before. Only linking it for the Ube flavouring. This Jelly Roll is made with whipped cream rather than a custard.

Yup, I actually bought 2 brands to see which one I liked better. Apparently you "can" buy like, freeze dried ube or ube root here, but I've been to multiple Asian markets with no luck so. . .extract it is!!! Makes wonderful Ube ice cream for halo halo too!

I ordered some purple sweet potatoes from Azure Standard this past summer. 20 lbs was too much for us to eat so I cooked some and then dried them in the dehydrator to grind into powder. I'm sure it will be an interesting color/flavor to add to desserts and bread, nice bright purple.
