Baba Ghanoush for dinner 9/8/25

Picked a bunch of Ichiban eggplant today and instead of the usual frying and freezing for later use in parmigiana, I decided to make some Baba. Came good.
On a sentimental note, Dave, pepperhead212, also grew Ichiban eggplant, so I made this today with him in mind and in his memory and honor.

Earlier this afternoon I'd made a tuna macaroni salad. Ate it early around 5 or so. Time sort of blurs when involved with a 4 yr old. We made a small batch of Oatmeal, current (she doesn't like raisins 🤔) cookies.
When she asked me what currents tasted like I was a little stuck for an answer. 1. I don't know how to describe them as I don't think she knows currant berries. And 2. didn't want to say they were like raisins! So I opted for "sort of like dried grapes". She said "oh that sounds good, I'll like the currents in them." 🤭
 
Chicken tostada courtesy of Taco Bell and my local Mexican restaurant.

I had the shredded lettuce, cheese, tomatoes, and sour cream at home. From Taco Bell I got two shells that they make their Mexican Pizza with (they only sell them in twos and they're pretty awesome - I don't know why TB doesn't sell them in a sleeve or something) and 4 side orders of their cantina chicken.

From the local Mexican restaurant I got an order of refried beans to go.

So, heat the beans and spread them on one of the tosada shells. Heat two of the sides of chicken, toss it with the lettuce and add it to the top of the beans, then add the cheese, diced tomatoes, and sour cream. And I had a restaurant quality chicken tostada at home. The best part is I still have enough chicken and refried beans to make a second one tomorrow.

And I still have some leftover tostada shells I got from the store a couple weeks ago to have just plain old bean and cheese tostadas to finish the refried beans up.
 
That was easy, left over lamb pappardelle.

Tell her one of your online friends favorite breakfasts is oatmeal with currents, she eats them every day.
I'll tell her tomorrow morning on the way to school - 'wise little miss' will come up with a classic comment I'm sure. In the end she only ate 1/2 a cookie as she was still eating her lunch from school. This seems to be common trait here as her bro rarely eats his lunch at school - but when he gets home after... go figure.
 
I made frikadeller and home fries. I had the rest of the horta, some pickled beets, pickled red onion, and some hot giardiniera. I am very fond of frikadeller. BTW, does anyone else think of the Star Trek episode, "The Devil in the Dark", when I mention horta? Remember the Horta, the mother creature that looked like it was made of Styrofoam and shag carpet? I think of that every time I see or hear "horta". :ROFLMAO: Vanilla ice cream and shortbread cookies for dessert.

I’m allergic to eggplant, so no baba for me. But with some good pita, it will be a great dinner.

I had leftover cold lobster and shrimp and an ear of corn.
I'm not allergic to eggplant, but it aggravates my arthritis enough that I have to forgo the baba ganoush. I love baba ganoush. I came across the concept of baba ganoush made with roasted zucchini instead of roasted eggplant. I tried it. It was too sweet for my taste, but I'm weird that way. I find things to be too sweet that other people find just right. So, you just might like baba ganoush made with roasted zucchini.

You may need to have a conversation about why they are not eating at school. Typically it falls into one of these reasons:
  • Lunch time is too early. It isn't uncommon to begin lunches at very big schools at 10:20ish and they just are not hungry yet. (Pack a snack thingie if this is the cause.)
  • Someone at their table has very little to eat and they feel bad eating in front of their friend.
  • Someone begs for what they bring and they do not want to give it up.
  • Someone is demanding part of their lunch.
  • They are playing and chatting and don't want to take time to eat.
The first and last are acceptable to me though....they will learn as they grow. The middle reasons are not okay. You know what I mean.
 
I ask, her answer is the last one - too busy playing and chatting with the others.
This one is not one to mince words - if it is any of the other reasons she would be sure to tell me!

And I forgot to tell about bliss having oatmeal and currents. I will remember when we have some after school! LOL
