There's a product in Spain called Iberico pork which is a product that is fed acorns as the main diet and highly prized around the world and I have ordered some Iberico pork the pluma cut which is like a skirt steak in beef. In Canada Iberico only comes frozen and the pluma cuts are generally around 1 to 1.2 lbs and it cost 39.00 which is a lot, but it's really like the wagyu of pork and looking forward to it. if this ends up being a religious experience then there's a rack that weights around 5 lbs for 100.00, which would be on my bucket list for sure.

Yes I'm aware of that and in Canada depending on the size and grade they range from 500.00 to 2,000.00. Costco in the US also have serrano jamon for about 100.00, so big difference when compared to the Iberico for 649.00.

I've only been to half dozen places in Ontario where they offered jamon and none where Iberico and they were all serrano jamon. for 100g's the prices varied from about 35.00 to 50.00 and that's for serrano, not a cheap appy.

I'm not surprised Costco offers Iberico but WOW, it's not cheap.

COSTCO sells Iberico hams for the same reason Chevrolet sells Corvettes. It's not about making money off of that one product, but making money on the Image... the PR.

The difference is Costco is actually selling the top tier, the very best iberico jamon and at almost a wholesale price where GM is making 15,000.00 a pop. Not exactly a comparison. A restaurant would need to sell iberico jamon for about 200.00 for 100g's serving and after a whole jamon is used they'll make around 4000.00 which is a good profit but 200.00 for an app.

GM loses money on base model Vettes, and dealers make big bucks marking up the most desirable models. COSTCO loses money on their rotisserie chickens, but picking up a rotisserie chicken at COSTCO will cost you 300 bucks by the time you get to the cashier. :ROFLMAO:

Our Jamon iberico ham that we started nibbling on NYE is still there even though we nibble on it often. Those paper-thin slices seem to regenerate every night. We may still be on it next NYE if it does not start decreasing.....

What do people do with leftover jamon - especially the harder pieces along the outer sides.

Not particularly for jamon, but for any charcuterie or cold cuts. Save them in the freezer and when there is enough, make solyanka, a Russian soup. Charlie shared the recipe. I have made it a couple of times and really, really like it.


Sometimes when I have charcuterie that is getting dry, I fry it and use it like bacon. Those hard outside bits should work fine that way, if you can slice it kind of thin.
