3 1/2 lbs. chicken
1 1/2 pounds pork back fat
3 TBS Kosher salt
1 tsp. black pepper
1 1/2 tsp minced garlic
4 TBS tightly pack fresh chopped basil
1/2 cup fresh diced roma tomatoes
1/4 cup diced sun dried tomatoes
1/4 cup red wine vinegar
1/4 cup EVOO
1/4 cup dry red wine
Mix all ingredients and stuff into casings.
