I wonder how they would be ground up for burgers? Maybe add some pork fat?

I've not seen them done as burgers or even sausages.

I suppose pork fat could work.

Yes
The common meats are chicken, beef and pork. And goat.

Hunting is protected.
You'll not often see game meat in the "standard" shops and butchers
