Mudbug, I found this at www.cooks.com. I'll have to give it a shot sometime!
CAJUN BEEF ROAST
3 to 3 1/2 lb. roast
1 tsp. dried oregano leaves
1 tsp. dried thyme
1/2 tsp. garlic powder
1/2 tsp. ground white pepper
1 tsp. paprika
1 tsp. salt
1/2 tsp. black pepper
1/2 tsp. onion powder
1/4 tsp. ground red pepper
Combine spices and rub over roast. Place in open pan on a rack. DO NOT add water. DO NOT cover. Roast in 425 degree oven to rare. Allow 45-50 minutes.
