---For the Dough---
2.25 tsp. fast rise yeast
1 tsp. brown sugar
1 tsp. salt
2 tbsp. olive oil
1.5 cups warm water
3.5 cups all-purpose flour

---For the Sauce---
15 ounces tomato sauce
3 cloves minced garlic
2 tbsp. olive oil
2 tsp. dried basil
2 tsp. dried oregano
1 tsp. sugar
.5 tsp. salt
.25 tsp. black pepper

---For the Filling---
1 cup chopped ham
1 cup grated mozzarella
1 cup ricotta cheese
1/4 cup parmesan cheese

To prepare dough, mix yeast and brown sugar in the warm water and allow to activate for 10 minutes, or until foamy.
Place salt, oil, and flour in the bowl of an electric mixer fitted with a kneading hook, and stir to blend.
Pour in water slowly, operating mixer on low speed, until is kneaded and smooth (may knead by hand if necessary- about 5 minutes).
Remove dough from bowl, oil bowl lightly, return dough to bowl, lightly oil top of dough, and cover bowl with a clean towel.
Sit bowl in a warm place for 30 minutes, or until dough doubles in size.
Meanwhile, make sauce and preheat oven to 375F (add your pizza stone to the oven at this time if using)
Stir together ingredients for sauce in a small saucepan.
Bring to a boil, then cover, reduce heat, and simmer for 30 minutes.
Keep warm.
Turn out dough onto parchment paper.
Punch dough down, and using a metal scraper, divide dough into 4 pieces.
Place each piece on a piece of parchment paper, and using fingertips, press the dough out into a circle of the largest size you can.
On one half of the dough circle, place the ricotta, mozz, and ham (1/4 cup each on each calzone) next to each other, with the ham in the center and keeping filling away from the edges.
Sprinkle each calzone with 1 tbsp. parmesan cheese.
Fold the remaing dough over and pinch edges to seal.
Cut small holes in the dough with a sharp knife.
Slide paper onto a pizza peel and from there onto preheated pizza stone or a large baking sheet.
Bake for 35 minutes or until puffy and golden.
Repeat with remaining dough (may bake more than one at a time).
Serve calzones with warm pizza sauce, if desired.

Makes 4 calzones
 
thanks mouse. i love baked calzones. much better than the deep fried ones... ya gotta have an extra cup of marinara for dipping to go with it...
