Here's a great Christmas recipe that a friend of mine gave to each person at her holiday party:
Kathryn's Sugarplum Jam
4 c. chopped ripe plums with the skins on
7 c. sugar
1/2 c. fresh lemon juice
Grated peel of 1 large orange
1 pouch of Certo liquid pectin
1/4 c. dark rum
In a large kettle, combine first 4 ingreds. Bring to a rolling boil that you can't stir down. Boil hard for one minute, remove the foam, stir in certo and rum, stir & skim for 5 minutes. Ladle into jars. It can be refrigerated or canned.
