I know that I may get a few concerns here, but I opted to try to dry-can potatoes based on this link from The Canning Diva website. Why concerns? Because it is not a recommended practice with most extension offices. However, the Canning Rebels paid for tests to be run and, based on their results, I decided to give it a try.
