Planning on making salsa today
The recipe calls for pints sized jars
As of now, I only have half pint.
Im going to run to a local store to see if they have full pints, but if not, then Im stuck with he half pints.

My question is, do I have to change the canning process ( time) if using half pint instead of the pint sized jars?

Water Bath method.

Yes, you can use the smaller jars. The general rule is that you can reduce the jar size, but you can't increase it safely. Process for the same amount of time.

I agree. The headspace 1/2 inch and the 15 minutes boiling water bath canning stays the same going from pint to 1/2 pint. This is consistent across Annie's recipe and NCHFP resources.

Thanks everyone. Good news is I happened to be by a farm-store today that sells everything, including pint sized jars. But, Ill remember what you all said just incase I find myself in a pinch again.

(Went raspberry picking today, so will likely make some jam to fill up those half pint jars. Good thing I bought them.
