First of all they really keep the temps exactly where I want.
Traditional Crock pots today I find cook way too hot. Even on low. Boiling and burnt.
All of them.
I smoke ribs for about 2 hours at 225F then separate them, dip them in sauce then into a pre-warmed casserole crockpot for an additional 3 hours on low setting. A few tablespoons of apple cider in the bottom for steam.
UMMMM delicious.
The Casserole style Crock pots were $18 forever at Walmart, then jumped to the low $20's, now the mid $30's and usually online only.
Doubles as an excellent serving vessel too.
I have a parts boneyard of broken ones in my shed. Lots of spare parts on hand. Hold that thought.
