Chicken Chimis
½ cup chopped onion
2 cloves garlic minced
¼ cup chili powder
2 cups salsa
3 tablespoons water
½ teaspoon ground cumin
½ teaspoon cinnamon
1lb-shredded chicken
1 cup refried beans
6 flour tortillas
Preheat oven 425 degrees.
Sauté onion and garlic in large pan till tender.
Stir in chili powder, salsa, water, cumin, and cinnamon.
Mix together and pour into blender. Blend till smooth.
Pour back into pan and stir in chicken. Heat through.
Spoon some beans down center of tortilla and then top with mixture. Fold up like a burrito and use toothpicks to secure it.
Put seam side down into a lightly oiled baking dish. Brush chimis with oil.
Bake 15 minutes or until golden. Turn every 5 minutes.
