THis recipe is so easy and mightly tasty.

CHICKEN MADRAS

1 lb (3 large) onions, thinly sliced
3/4 lb (4 med-small) apples, pared, cored and thinly sliced (granny smith)
1 tsp salt
1 Tbs (or more to taste) curry powder
4-1/2 lb whole chicken cut up
paprika

IN a 3 qrt baking dish (13x8x2) mix together onion and apples and sprinkle with salt and curry powder and mix well. Arrange chicken, skin side up, over mixture. Sprinkle chicken generously with paprika. Bake uncovered in preheated 400 degree oven until apples are soft and onion is tender crisp and chicken cooked through. Serves 6.
