Chinese Rib Marinade

well, here are two recipes i've never tried, but looking at the ingredients, they should be fairly close. you use these as a marinade, then after taking the meat out, boil the marinade to make a glaze, and brush on the meat during the final stages of cooking:

1/4 cup soy sauce
1/4 cup hoisin sauce
2 Tbls. honey
2 Tbls. dry sherry or sake
1/2 tsp. red food coloring
1 clove garlic - crushed

1 tbsp minced fresh ginger
2/3 cup rice wine or dry sherry
1/3 cup soy sauce
1/3 cup maple syrup
2 tbsp sesame oil

these should both be red & sweet, but not spicy. maybe add some red pepper flakes to bring up the heat?
