Christmas casserole potluck challenge

I’ll admit I’m to blame as much as anybody but with how humble the mighty casserole is for the whole section to only have 11 pages is low! (IMO) so here’s me jumping in.

Let me be clear this is just a for fun to make you think a little and shake things up.

With Christmas on the way if you were asked to bring a casserole to a Christmas casserole potluck what would you bring?
Rules:
- you can’t use a 9x13 pan
- you can’t say lasagna
Maximum
- 1 meat, 1 veg, 1 herb, 1 pasta, 1 cheese, 1 sauce

I think I’d go for a shredded pork with oregano, butternut ravioli, mozzarella and a salsa sauce. In an deep oval casserole dish

Thanks for posting this challenge. I used to do challenges on DC, but I got busy, and to be honest, a bit lazy. Well, a lot lazy.

Fantastic challenge!

Casseroles are the ultimate comfort food. My mom was a terrible cook, but being a 1960s mom, she could make a good casserole. I also grew up Lutheran, and casseroles are the food of my people. :ROFLMAO:

I accept your challenge, and hope I can come up with something good to present.

Hmmm....okay. A chicken enchilada casserole.

Shredded chicken, tortillas instead of pasta, rotel (the veggie, I guess,) shredded cheese (I like a cheese blend but will use Monterrey jack,) green onion for the herb, and green verde enchilada sauce.

Tear up the tortillas and line the bottom of of a square pan. Layer on the chicken, rotel, cheese, sauce, tortillas, chicken, rotel, cheese, sauce, and bake until bubbly. Top with green onions.

Actually, I would add a can of refried beans over the rotel layers but the other would likely work too.

Just to be sure - I mean a LOT is at stake here...
1. Has to be a casserole but not in a 9 x 13 pan.
2. Can not include the word "lasagna".
3. But can include any - or - all of the following: - meat, vegies, herbs, pasta, cheese, sauce.

Correct?
 
I sort of thought the idea of a Pot Luck was that everyone brought a dish to make up an entire meal, so yeah Sara, no reason you can't bring a dessert.
As long as the co-ordinator knows enough others are not. Might sound good at first but I think a Pot Luck that consists only of desserts would be a little weird, no? 🤣🤣

I once went to a dessert party that was a potluck. Most people brought desserts. There were a couple of people who brought regular food, but that was okay too.
 
Not my green bean casserole, that's for sure! A few of you may recall me saying in a Thanksgiving thread that I'm asked to bring the green bean casserole every year and I had no idea why, since nobody eats the dang thing anyway. Maybe two people, including myself, will touch it. Well it was no different this year. And I even downsized the casserole to a tiny 8x8 pan and, at the end of the meal, only about 1/8 of it was gone. So next year I'm fixing something else, whether I'm asked to bring the green bean casserole or not.

Which is why this thread will be perfect for me because I can get some ideas from y'all :brows:

As for what I would take to a Christmas potluck, I would bring my pineapple stuffing casserole. It sounds odd, but it's actually really good.
 
I have several casseroles that I would love to try. Haven't as they make so much and would take an effort on my part to reduce.
Barley Casserole (serves 8)
Herbed Seafood Casserole (serves 8)
Holiday Pot Pie (serves 8)
Pear & Rutabaga Casserole (serves 8)
Tex-Mex Turkey Casserole (serves 4 - not on my wish list but thought some in Texas might be interested! LOL)

But best of all is Ina Garten's Mushroom & Leek Bread Pudding. Serves 8 to 10.
I've made this one on several occasions - my favourite.

Do Risotto's count? Or Jambalaya? both yum!

Now that's interesting. Never heard of a barley casserole before. Now I have to look that up, lol.
 
butter,
scallions (green onions)
garlic
celery and carrots
chicken stock
parsley
pine nuts or slivered almonds
-- I think as it is Christmas I would splurge for the pine nuts but probably otherwise I'd do a mix of the two or just the almonds.
