Christmas casserole potluck challenge

garlic
celery and carrots
chicken stock
parsley
pine nuts or slivered almonds
-- I think as it is Christmas I would splurge for the pine nuts but probably otherwise I'd do a mix of the two or just the almonds.
That sounds pretty darn good. I love barley. Especially in soups, but I can honestly just cook some barley and toss it into a bowl with a little butter and salt or eat it that way as a side dish.
 
I sort of thought the idea of a Pot Luck was that everyone brought a dish to make up an entire meal, so yeah Sara, no reason you can't bring a dessert.
As long as the co-ordinator knows enough others are not. Might sound good at first but I think a Pot Luck that consists only of desserts would be a little weird, no? 🤣🤣

I grew up Lutheran. I think it is possible that Lutherans invented the pot-luck dinner. :ROFLMAO:

So yes, the idea is everyone brings something.

Chicken Broccoli Stuffing Casserole. I've not made this but my gal pal has and it is positively delicious and a total and completely easy cheat meal.
Using a stuffing mix, cooked chicken, frozen broccoli, broccoli soup and cheese. A retro 50's/60's bit of yummy.
 
Just to be sure - I mean a LOT is at stake here...
1. Has to be a casserole but not in a 9 x 13 pan.
2. Can not include the word "lasagna".
3. But can include any - or - all of the following: - meat, vegies, herbs, pasta, cheese, sauce.

Correct?
If you can make a not lasagna lasagna ok. But no Mexican lasagna or seafood lasagna or anything like that.
As for ingredients if you can make it with less that’s ok but it was just limited in each category to show how good and varied simplicity can be

My goal being the cool uncle is to introduce my nieces and nephews to new stuff. One year I took a tray of baked homemade enchiladas for Christmas to my sister’s house. They ate them all up like crazy. The closest thing they get to Mexican food is old elpaso yellow packet tacos. (Not knocking them but there’s a bigger taco world out there lol)

You're preachin' to the choir here. Being a Texan, I eat a lot of tacos, and they DO NOT come from Taco Bell. There's always tortillas in my house. Usually flour, because corn tortillas have a shelf life measured in hours.

Tacos are great for grilled leftovers. Steak, chicken, pork... whatever. Ground beef with one of those seasoning packets is not allowed in my house.

For the not meat eaters, grilled veggies make a tasty taco, too.

Hmmm...I would like to make a scalloped potato (veg) casserole with ham (meat), Alfredo sauce (sauce), with Cheddar and Gouda (cheeses) and garlic, chives, parsley, and maybe some dill weed (herbs). I could bring this in a large stock pot. With a lid even.
