the Salad tonight was a (Wish it was) Spring Mix, with Asian Sesame-Ginger Dressing....

It's been very busy the past coupla days
here In My Kitchen In The Middle Of The Desert,
so it was a late lunch/early dinner for us two.
My version of an Italian Hoagie with chips,
sliced tomato (for DH only) and a diet Coca Cola
to wash it all down with.
MAN! I found Hot Capicola at our local Safeway
and it was HOT!!! :nuke:

Dessert later will be a small plate of assorted sweets.
Ms. Neighbor-Across the Street brought us a lovely
tin of homemade cookies and a box of See's Candies :clap:
 
We're having leftovers again. I ran out of "fresh" leftovers,, so I pulled a container of Mexican chicken from the freezer. I do need to make some rice and a veggie, though.
 
We did a simplified version of "Det store kolde bord", a Danish "cold table". There were cold cuts, cheeses, crackers, Scandinavian crisp bread, baguettes, pickles, olives, and marinated artichoke hearts. If it were properly Danish, there would have been heavy rye bread, hard boiled eggs, pickled herring, and some other fish too. Neither of us had a lot of spoons. It was a lovely, lingering meal. The Danish name for this evening is "Lille Juleaften", which means, "little Xmas Eve".
 
Used Kayelle's fish batter recipe on cod. Served with fries, tomatoes and avocados and Texas toast.
Baked a peach pie for dessert.
