Cooking Oil Question

Wasn't sure where to ask this. We got lots of tomatoes this year. While the weather wasn't good for forest fires it was for growing tomatoes.

I like to roast some for future use. Most recipes I looked at say to use olive oil and roast at 450 dF. The oil seems to burn on the flat pan. Wouldn't it be better to use oils with higher temperature allowance?
 
Quite agree, GG - 450° is way too high.
375° sounds good to me and it won´t burn up the oil.
And I wouldn´t change the oil - just the temperature.
 
I agree with roasting veg at 375°F. I set my oven to 350, but it runs a bit hot, so it's probably 375. I have never had an issue roasting vegis tossed in EVOO.
