Copycat Chewy Oatmeal Cookies

Copycat Chewy Oatmeal Cookies

yields 1 1/2 dozen large cookies


Ingredients:

3 C. Old Fashion Rolled Oats

1 C. AP Flour

¾ tsp. Salt

½ tsp. Baking Soda

4 Tbsp. Butter

½ C. Vegetable Oil

¼ tsp. ground Cinnamon

¾ C. Brown Sugar, packed

½ C. granulated Sugar

1 Egg + 1 Yolk

1 tsp. Vanilla Extract

½ C. Raisins or dried Cranberries

Steps:

Preheat the oven to 375°F
Melt the Butter in a saucepan until just browns; transfer to a bowl
Add the Cinnamon to let it "bloom"
Pour in the Oil and combine
Next add the Sugars and beat well
Add Eggs and Vanilla; stir again
Last are the rest of the ingredients; combine well
Portion out 3 Tbsp. of dough per cookie; flatten to 2 ½ inch diameter using wet fingers
Bake for 10 ½ minutes, until the edges are just set
Place the pan on a rack to cool; allow the cookies to cool on the pan for 5 minutes
Transfer the cookies to the rack to cool completely

This cookie is one of my very favorites!
I had watched an America's Test Kitchen episode on You Tube that featured this cookie and I watched it over and over again as I wrote everything down.
Mu Mother requests these cookies often.

Oatmeal raisin may be my favorite cookie. I also add nuts.

I have been using the Quaker recipe for Vanishing Oatmeal Cookies and think they're great but I'll have to check out this recipe.
