CrockPot Onion Jam - with whole onions WITH SKINS ON????

I'm intrigued by a recipe I found for onion jam - dump whole onions with skins on into slow cooker, add some spices,
cook for 5-8 hours. Has anyone tried this? What happens with the skins?
 
Sounds a bit strange to me too! Even using them in making broth they stay fairly solid, not crispy of course, but I would want to chew on them.
Perhaps they mean to take off the paper but still leave the white ones that have started to dry out?

I found the recipe I think you are talking about here. Keep reading, the skins are removed after. 😂
