This was wonderful! Made lots for the 2 of us and there was essentially nothing to clean up because I used a crock-pot liner.

katie I'm confused. In the pictures of how this dish might look doesn't reflect the recipe and what is the liquid the roast is submerged in when in the recipe no liquid is called for or any veg for that matter. Also it's interesting that a loin roast was used considering how lean it is.

@pictonguy I believe those pictures are versions from readers who have made it.
I too am a bit concerned about lack of liquid and/or fat. Their suggestion that a tenderloin could also be used is a bit... shall we say - bizarre! That is even more lean than the loin which might at least have a fat cap.

Right, ok, that makes sense then.

I don't mean to derail this post and was just curious because a pork loin is almost always roasted because of it's lack of marbling (fat) and less collagen.

I guess if a loin roast is cooked at a low enough temp especially if there's a fat cap and then allowed to rest for enough time it would probably end up tender but it is unusual imo to pick that cut and yeah I couldn't imagine using the tenderloin. I mean katie says it was, so I suspect it was, just something I would have never done and probably picked something like a boneless center cut rib roast instead.

and although most of the pictures seem to be out of focus (at least on my screen) I would say that several of those pieces of meat were not loins at all. One was definitely a wrapped butt.

I have found a few recipes on this site but as they are all individual people posting them you need to exercise caution as much as you would with a random Youtube video - anyone can post!l

Aside from not putting the slivers of garlic in the loin because I don't like them, you can't go wrong with this simple recipe.

I added absolutely no liquid and, after the cooking process, there was more than enough from the natural juices of the roast.

Good to know katie, thanks. I'll give it a try the next time I find a deal on pork loin. Did you brown the roast first?
