Did you hear about umami?

Yes, I saw that. I'm not sure where the WSJ got the idea it was "new!"

We've been talking about umami for at least 10 years now... it's the flavor of mushrooms! and other assorted foods like that. and it's manufactured as MSG, which may not be harmful, but it sure is the only food in the spectrum that causes me to get headaches... :ermm:
 
I just e-maile dthe article to my wife and this is what she said: "You've been cooking like that for as long as I've known you".

Honestly though I have to say I had no idea about any unami or tzunami for that atter. Simply in Russia there was not very many spices available and to make food taste good one should try different food additions, i.e. mushrooms, etc.

So I'm kind of proud of my self. :mrgreen:
