[Cooking Goddess]

We had romaine and spinach salads with Cardini's Original Caesar Dressing (good stuff ), followed by Tuscan Butter Shrimp with pappardelle.

I roasted a Turkey Breast and we had that along with Jasmine rice, gravy and zuke on the side. No pictures...sorry!

It wasn't a good day!
Quick dinner of grilled Salmon Filets and Asparagus ... gotta move on!

Since my migraine isn't gone yet, we did a scrounge supper. I had some store bought samosas and tamarind sauce, so we started with those. I heated them in the toaster oven. Then we just munched cheeses and cold cuts on various kinds of bread. Nice, slow conversation filled supper.

Frozen breaded butterfly shrimp with a handful of frozen shoestring potatoes and the last of the cabbage salad.

I made a big pot of Dirty Rice, a Louisiana staple.

What did you eat?

This sounds great and I want to try it but I need to adapt the recipe to a single serving.

I'm not sure how best to do that so it may take a few attempts before I get it right!

Practice, practice, practice.

I was so tired yesterday afternoon I fell asleep and when I woke up, DH had made spaghetti with meat sauce for dinner And garlic bread.

Was too pooped to pop. Ate some grapes.
But I did some small shell pasta, poached a chicken breast, boiled up some eggs - so I'll be good for the rest of the weekend.
And got a catfish... just check'n out recipes now. Oven-baked with... something

We had tortellini with marinara sauce, Italian bread, and pepperoncini.
Dragnlaw, there is a great recipe for Cajun baked catfish on tasteofhome.com/recipes/cajun-baked-catfish. I've used it a few times, and it is really good. What to serve with it? Cold beer!

We had pressure cooker red wine short ribs with pearl onions, carrots and fingerling potatoes. All gone.

This sounds great and I want to try it but I need to adapt the recipe to a single serving...

I don't make a full recipe, more like half when it comes to the shrimp and pasta. Himself does love his pasta. BUT I always make more sauce! The first time I measured exactly and thought the sauce volume was too skimpy. You could probably measure shrimp and noodles for one, then divide the sauce ingredients in half. Save a little cooking water; I usually end up adding that to the sauce, too.

And I include way more spinach than called for. Shhhh, don't tell Himself.
