We are having leftovers for tonight. Stuffed peppers, mashed potatoes, string beans, and acorn squash. Most things were from the garden!

So, yesterday, Wednesday 2025-08-27, I cooked a couple of Santiago Lime & Cilantro Pork Sausages in my toaster oven. I also stuck a store bought samosa in the oven. I had the samosa with some of the tamarind sauce that came with them. I had some crudités and hummus with that. I was still having the migraine and was really, really tired, even though I got 8½ hours of sleep.
 
Not sure what we'll have since I went to "the big city" to run errands and didn't get home until after 3 p.m.

Glenn has spent the last several days on the tractor mowing the back fields. We have 13 acres and he lets the back area grow up in the summer and cuts it just before fall.

I know I'm tired and I am sure he certainly will be, too. 6 hours or more on irregular terrain on a tractor wears thin. He won't be done today. Probably a couple more days to finish.

We may both wind up having canned soup and an early bedtime.
 
I made caponata, delicious! Eggplant was on sale for 79 cents/lb so we bought 2. I love it by the bowl, I might try it over toast. He had his with veggie rice and seasoned diced tofu, he loved it. MMMMM we might have to get more eggplant, it tis the season for a lot of those things coming out of the garden.
Zucchini bread and mint nice-cream for sweets.
 
Today, Thursday, I pulled what I thought was a decent sized pork chop out of the freezer. It was a bit lumpy. Once I defrosted and opened the package, I discovered it was two small pork chops. That was why it was lumpy. Well, that butcher shop isn't great at cutting the chops evenly, so less lumpy. I fried that up with some mushrooms and reheated the last of the sunroots in mustard cream sauce. I also had a salad with the last of this batch of vinaigrette.

Did the last of the ribs from the freezer - sooo tasty!
along with some mashers and cold beets.
That was tonight - still don't know what I had last night... couldn't have been very memorable, eh?
 
Wednesday I made a steak sandwich with leftover flat iron steak with Swiss cheese melted on top, served on a bakery kaiser roll.

Thursday, it was steak quesadillas with leftover flat iron steak, a shredded cheese blend, and fresh pico on flour tortillas.

I have one more sandwich worth of steak left.

The weather is way cooler than it should be, so the smoker will be in use this holiday weekend.
