Context and dosage needs to be understood on an individual basis, which is easier said than done when it comes to saturated fats from animal sources and polyunsaturated fats (PUFAs) from seed oils. Neither is inherently harmful or beneficial in isolation, their impact depends on how much you consume, what foods they come from, and what else is in your diet.

But. If we look from another perspective the core issue isn’t seed oils per se, but their industrial overuse in ultra-processed foods (UPFs) and the sheer volume of UPFs in the modern food chain is what makes seed oils potentially detrimental to human health.

For example almost all and you could say 100% of the US population consumes processed and ultra processed food to some extent with over 55% of total daily calories coming from ultra-processed foods alone. This includes both adults and children, across all age groups and regions.

Actually heart disease is just one of the consequences of a diet like this which is in a cluster of metabolic dysfunctions that include insulin resistance, diabetes, NAFLD, obesity, mental health disorders, digestive disorders etc this isn’t just about one disease it’s about structural dietary collapse.

UPFs represent a breakdown in food culture, nutrient ecology, and metabolic logic. Reclaiming traditional fats, whole ingredients, and seasonal cooking isn’t just nostalgic, it’s preventive medicine and one that if it hasn't been obvious is what I personally promote but I do admit, to a fault, lol. cheers.
 
The basic problem centers around the essential fatty acids, EPA and DHA found in omega 3's which require them to be in balance with the other omega which is our omega 6's and when these are out of balance they promote a few inflammatory markers like CRP and interleukin 6 and a couple of others as well.

back in the 70s mc Ds and a lot of others used a combination of i think it was lard and beef tallow in thier deep fryers then the gov stepped in and they changed to all vegatble oil in order to get rid of the transfat , at least thats the way i remember it

ou No. When the food industry began replacing beef tallow which don't actually contain trans fats with partially hydrogenated vegetable oils (PHOs) in the mid 20th century, they did not fully understand the health risks of trans fats at that timer
Now they sell beef tallow in a jar to smear on your face to tighten up your skin and make you look younger.
 
Except, while in Spain, my sister said "oh look! onion rings" grabbed some off of Dad's plate .. and stuffed them in her mouth.
I never thought I'd see the day my 'posh' sister would spit food out of her mouth but she did! My father was in stitches.
