Drying/preserving egg plant

I grew up eating kale, but it was harvested after the first frost.
No bitterness in that stuff ;)

Here, people say that kale is bitter until after the first frost and go so far recommending that one freeze it to get rid of the bitter.

Edit: oops, I misread what you wrote. I thought you had written that you ate kale that was havested before the first frost. I read it that way more than once. :doh: D'oh!

I suspect that it depends on the cultivar. I think the kale in Denmark must be nicer tasting, because it's very popular there. I think their leeks are better tasting there too. Maybe you grew up eating kale that was a less bitter cultivar. Or maybe your soil doesn't have the components that allow kale to become bitter.

Very probably the same as in Denmark as I was born and raised in the Netherlands.
To make it clear, dad only harvested kale after the first frost.

I decided to look up kale in Danish. It turns out that the cultivar that is common in Danish recipes doesn't seem to be common here in North America. It doesn't even have Wikipedia entry in English. The cultivar is Brassica oleracea sabellica.
