This is a favorite of ours on Christmas Eve.

Equal parts of heavy cream and tomato sauce
fresh thyme sprigs
fresh basil leaves
salt if necessary
pepper as desired

I usually use a combination heavy cream/half and half. Heat the cream, tomato sauce and fresh thyme springs (tied in a bundle). Heat very slowly. Once heated remove thyme sprigs.

Chiffonade the basil and heat on low for about 20 minutes to impart the flavor.

Serve with a dollop of sour cream for garnish - optional.

This is a very simple, very good soup.

Hi Miss Trish,

Did you actually try it yet? Sorry, I couldn't really tell - if you haven't let me know how you like it when you do. And if you have - Thanks for reporting back.
