Eat or toss corn tortillas?

I've had a large number of corn tortillas in the fridge for about 3 weeks. How long can they last in the refrigerator until I need to toss them?
 
They can last quite a while. If there is nothing growing on them than I would eat them.
 
I just bought a package of La Banderita Corn Tortillas yesterday and the expiration date says 5/11/10...so a month and a half. But the grocery stores have to be extra cautious so I'm sure you could extend that somewhat.

I plan to make Fish Tacos tonite for my son and his girlfriend who just rolled into town for two nites...i call them my professional transients because they travel all over the world and get a job while they're there. Last stint was an Organic Farm in Belize for 3 months. They caught all their own fish to eat in the ocean. After finishing up some college courses then next stint will be Glacier Nat'l Park in Montana to restore trails etc. He even did a 3 week fishing job in Alaska's Bering Sea. They're only 24.
 
I have corn tortillas on hand all the time for DH who is gluten/wheat intolerant. I freeze them when on sale but have kept them in the fridge for a couple of months and they have been fine.

Now I have a craving for fish tacos!

...another tortilla question: Are Corn Tortillas Vegan Friendly?
My Vegan daughter is coming for dinner and can't have the fish but I can substitute veggies...BUT can she have the corn tortillas? The only questionable thing it says in the ingredients is that the tortillas are treated with calcium hydroxide...i don't guess that has anything to do with dairy products though...or does it?
 
I agree with GB. The calcium hydroxide is a preservative so you might want to check with her if she eats only natural. I have a vegan I cook for often and she does not eat chemicals of any kind!
 
Yes, the La Banderita Corn Tortillas are Vegan friendly! I just talked to the "Quality Assurance Specialist" at La Banderito where they make the Corn Tortillas and he said they are not cooked in lard but rather baked in an oven with a metal plate and a fire underneath. He said the preservatives are natural.
 
Good to hear! I will make a note in my special diets book. The company that makes the ones I buy here is very natural so I am sure they are the same. I had never thought of it before because I had never made them vegan before!

Thanks! 100 of them are frozen now. The others are being used for tacos, enchiladas etc. :)
