Chief's Eggplant Dip

This was great with tonight's yeast-raised frybread. It would also be great with Townhouse, Ritz, or those crunch, thin whole grain crackers (water cracker?).

Ingredients:
2 cups baked eggplant cubes
1/2 cup cottage cheese
1 tsp. ground cumin
1/4 cup sweated onion
2 each, mini red, yellow, and orange sweet peppers. sweated
3 cloves peeled garlic
2 tbs. lime juice
2 tbs. roasted sesame oil

Place all ingredients into your food processor, and pule to desired consistency. Enjoy.

Wow, now, OK; his is definitely being planned to make soon.

I think my wife will love this, especially if the cumin is pronounced.
